Baked lemon and herb halloumi

  • 360g Co-op Mediterranean vegetable tray bake
  • 2 tsp lemon juice
  • 1 tsp Co-op clear honey
  • 1 tsp Co-op olive oil
  • 1/2 tsp dried rosemary
  • 60g Co-op halloumi, sliced into 6
  • 110g pack Co-op tomato and Mediterranean herb couscous


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Remove the film from the vegetable tray bake and toss the vegetables in the dressing
  3. Cook in the foil tray in the oven for 30 mins
  4. Meanwhile, mix the lemon juice, honey, olive oil and rosemary in an ovenproof dish
  5. Add the halloumi and turn the slices over so they’re coated on both sides
  6. Leave to marinate for 10 mins then cook in the oven for 12-15 mins
  7. Cook the couscous according to the pack instructions
  8. Fluff up with a fork and serve with the halloumi and vegetables when they’re done
