Ingredients

  • 200g Co-op crinkle cut oven chips
  • 65g Co-op cooked beetroot
  • 60g Co-op halloumi cheese
  • 1 x 400g can Co-op butter beans, drained and rinsed
  • 1 spring onion, trimmed and finely chopped
  • 1/2 level tsp mixed dried herbs
  • 15g fresh breadcrumbs
  • 1 Co-op British free-range egg, lightly beaten
  • Freshly ground black pepper
  • 1 tbsp sunflower oil
  • Serve with 60g Co-op mixed leaf salad and 2 tbsp Co-op honey and mustard dressing

Method

  1. Preheat the oven to 220C/fan 200C/Gas 7
  2. Spread the chips out evenly on a baking tray and cook for 15-20 mins
  3. Meanwhile, coarsely grate the beetroot and halloumi and set aside on a piece of kitchen towel
  4. Roughly mash the butter beans, then add the beetroot, halloumi, spring onion, herbs, breadcrumbs and egg. Season with black pepper and shape into 2 burgers
  5. Heat the oil in a frying pan and cook the burgers over a medium heat for about 3 mins on each side, until golden brown
  6. Mix the salad with the honey and mustard dressing.
  7. Serve with the burgers and chips
