
Beetroot and halloumi burgers

Ingredients
- 200g Co-op crinkle cut oven chips
- 65g Co-op cooked beetroot
- 60g Co-op halloumi cheese
- 1 x 400g can Co-op butter beans, drained and rinsed
- 1 spring onion, trimmed and finely chopped
- 1/2 level tsp mixed dried herbs
- 15g fresh breadcrumbs
- 1 Co-op British free-range egg, lightly beaten
- Freshly ground black pepper
- 1 tbsp sunflower oil
- Serve with 60g Co-op mixed leaf salad and 2 tbsp Co-op honey and mustard dressing
Method
- Preheat the oven to 220C/fan 200C/Gas 7
- Spread the chips out evenly on a baking tray and cook for 15-20 mins
- Meanwhile, coarsely grate the beetroot and halloumi and set aside on a piece of kitchen towel
- Roughly mash the butter beans, then add the beetroot, halloumi, spring onion, herbs, breadcrumbs and egg. Season with black pepper and shape into 2 burgers
- Heat the oil in a frying pan and cook the burgers over a medium heat for about 3 mins on each side, until golden brown
- Mix the salad with the honey and mustard dressing.
- Serve with the burgers and chips
