Cous cous and halloumi salad

  • 160g cous cous
  • 2 tbsp Co-op olive oil
  • 1 clove garlic, crushed
  • Juice of 1 lemon
  • 60g halloumi, thinly sliced
  • 125g Co-op piccolo tomatoes, halved
  • 1/3 cucumber, chopped
  • 100g radishes, quartered
  • Handful each flat leaf parsley and mint, roughly chopped (optional)


  1. Put the cous cous in a small pan over a medium heat
  2. Dry fry for 3-4 mins, stirring regularly, until toasted
  3. Pour over 200ml hot water (take care, as it will bubble up), then cook on a low heat for a few more mins, until all the liquid has been absorbed
  4. Mix in 11/2tbsp of the olive oil, the garlic and half the lemon juice
  5. Season, take off the heat and leave to cool for a few mins
  6. Meanwhile, heat the remaining oil in a frying pan and fry the halloumi for 2-3 mins on each side, until lightly golden
  7. Mix together the tomatoes, cucumber and radish, and parsley and mint if using, then toss in the remaining lemon juice
  8. Divide the cous cous and salad between 2 bowls, and top with the halloumi
