
Cous cous and halloumi salad

Ingredients
- 160g cous cous
- 2 tbsp Co-op olive oil
- 1 clove garlic, crushed
- Juice of 1 lemon
- 60g halloumi, thinly sliced
- 125g Co-op piccolo tomatoes, halved
- 1/3 cucumber, chopped
- 100g radishes, quartered
- Handful each flat leaf parsley and mint, roughly chopped (optional)
Method
- Put the cous cous in a small pan over a medium heat
- Dry fry for 3-4 mins, stirring regularly, until toasted
- Pour over 200ml hot water (take care, as it will bubble up), then cook on a low heat for a few more mins, until all the liquid has been absorbed
- Mix in 11/2tbsp of the olive oil, the garlic and half the lemon juice
- Season, take off the heat and leave to cool for a few mins
- Meanwhile, heat the remaining oil in a frying pan and fry the halloumi for 2-3 mins on each side, until lightly golden
- Mix together the tomatoes, cucumber and radish, and parsley and mint if using, then toss in the remaining lemon juice
- Divide the cous cous and salad between 2 bowls, and top with the halloumi
