Ingredients
- 110g pack Co-op Mediterranean cous cous
- 1 red onion, cut into thin wedges
- 1 Co-op British courgette, sliced diagonally
- 170g Co-op British piccolo tomatoes
- 1 Co-op British little gem lettuce, quartered
- 1 Co-op British corn on the cob, kernels sliced off
- 2 tbsp Co-op olive oil
- 1/2 tsp smoked paprika
- 1/2 tsp dried oregano
- Zest of 1 lemon
- Fresh basil leaves (optional)
Method
- Make the cous cous according to the pack instructions
- Meanwhile, toss the onion, courgette, tomatoes, lettuce and corn with the olive oil, paprika and oregano
- Preheat a griddle pan and cook the vegetables for 5 mins until just beginning to char
- To serve, fluff the cous cous up with a fork, top with the charred vegetables, sprinkle with the lemon zest and tear over the basil leaves, if using
