  • 110g pack Co-op Mediterranean cous cous
  • 1 red onion, cut into thin wedges
  • 1 Co-op British courgette, sliced diagonally
  • 170g Co-op British piccolo tomatoes
  • 1 Co-op British little gem lettuce, quartered
  • 1 Co-op British corn on the cob, kernels sliced off
  • 2 tbsp Co-op olive oil
  • 1/2 tsp smoked paprika
  • 1/2 tsp dried oregano
  • Zest of 1 lemon
  • Fresh basil leaves (optional)


  1. Make the cous cous according to the pack instructions
  2. Meanwhile, toss the onion, courgette, tomatoes, lettuce and corn with the olive oil, paprika and oregano
  3. Preheat a griddle pan and cook the vegetables for 5 mins until just beginning to char
  4. To serve, fluff the cous cous up with a fork, top with the charred vegetables, sprinkle with the lemon zest and tear over the basil leaves, if using
