Ingredients

  • 4 Co-op conference pears, ripe but firm
  • Zest and juice of ½ lemon
  • 150g Fairtrade caster sugar
  • 1 Co-op Fairtrade Earl Grey teabag
  • 4 scoops Co-op Irresistible vanilla ice cream
  • 2 Co-op shortbread fingers, crumbled

Method

  1. Peel the pears and brush with the lemon juice
  2. Put the lemon zest, sugar, teabag and 500ml water in a pan just big enough to hold the pears
  3. Bring to the boil, then simmer for 2-3 mins until the sugar has dissolved.
  4. Carefully lower the pears into the syrup and simmer gently for 15 mins, or until tender
  5. Take off the heat and allow to cool
  6. Serve the poached pears with a scoop of ice cream, a drizzle of the cooking syrup and some shortbread sprinkled over the top
