
French onion frittata

Ingredients
- 2 tsp Co-op olive oil
- 25g Co-op unsalted butter
- 750g bag onions, sliced
- 2 garlic cloves, crushed
- 1 tsp dried mixed herbs, plus extra to serve
- 7 Co-op large British free range eggs, beaten
- 40g pack Co-op garlic and herb croutons
- 50g Co-op Irresistible Comté, grated
Method
- Heat the oil and butter in a nonstick ovenproof frying pan
- Cook the onion over a low heat for around 20 mins, until really soft and golden
- Add the garlic and dried herbs, then cook for another 2 mins
- Season the egg and add to the pan. Stir gently, then cook over a low heat for 8-10 mins, until the frittata is almost set. While it’s cooking, preheat the grill to medium-high.
- Scatter over the croutons and grated Comté, then grill for 3-4 mins, until the top is set and the cheese is bubbling
- Sprinkle with more of the dried mixed herbs to serve
