Ingredients

  • 2 tsp Co-op olive oil
  • 25g Co-op unsalted butter
  • 750g bag onions, sliced
  • 2 garlic cloves, crushed
  • 1 tsp dried mixed herbs, plus extra to serve
  • 7 Co-op large British free range eggs, beaten
  • 40g pack Co-op garlic and herb croutons
  • 50g Co-op Irresistible Comté, grated

Method

  1. Heat the oil and butter in a nonstick ovenproof frying pan
  2. Cook the onion over a low heat for around 20 mins, until really soft and golden
  3. Add the garlic and dried herbs, then cook for another 2 mins
  4. Season the egg and add to the pan. Stir gently, then cook over a low heat for 8-10 mins, until the frittata is almost set. While it’s cooking, preheat the grill to medium-high.
  5. Scatter over the croutons and grated Comté, then grill for 3-4 mins, until the top is set and the cheese is bubbling
  6. Sprinkle with more of the dried mixed herbs to serve
