
Frozen yogurt bark

A refreshing snack to grab from the freezer on a hot day

Ingredients
- 227g pack Co-op British strawberries, sliced
- 500g Co-op Greek style natural yogurt
- 4 tbsp Co-op clear honey
- ½ tsp vanilla extract
- 2 tbsp unsalted pistachios, finely chopped
Method
- Blend or mash half the strawberries in a bowl, until you have a purée
- In a separate bowl, mix together the yogurt, honey and vanilla extract
- Spread out in an even layer on a 20cm x 30cm baking tray lined with greaseproof paper
- Dollop over the strawberry purée and swirl into the yogurt using a knife
- Scatter over the remaining berries, along with the pistachios, then freeze the bark for 2-3 hours, until firm
- Cut into shards to serve. Store any remaining bark in the freezer for 2-3 months
