  • 150g Fairtrade caster sugar
  • 1 tsp Co-op ground cinnamon, plus extra to serve
  • 1 tsp ground ginger
  • 1 tsp ground mixed spice 50ml bourbon whiskey
  • 1 tbsp Co-op Irresistible lemon curd
  • 2 tbsp liquid from a can of chick peas


  1. First, make a gingerbread syrup
  2. Put the sugar, ground spices and 150ml water into a small saucepan and gently simmer, stirring to dissolve the sugar Reduce the heat and cook for 5 mins, until syrupy
  3. Set aside to cool completely
  4. To make the drink, put 75ml of the gingerbread syrup, plus the whiskey, lemon curd and chick pea water into a cocktail shaker or lidded container, along with a handful of ice
  5. Shake vigorously for 30 seconds, then strain into two glasses and dust with the extra ground cinnamon to serve
