  • 2 Courgettes, sliced
  • 3tbsp Co-op extra virgin olive oil
  • 80 g bag Co-op Spinach Rocket & Watercress
  • 1 Orange, zest finely grated, plus juice
  • 215g Pack Co-op Moroccan style cous cous
  • 80g Feta


  1. Place a griddle pan over a medium-high heat (or use a barbecue). In a bowl, toss the courgettes with 1 tbsp oil and season to taste.
  2. Place a layer of courgettes in the pan, cook for 2 mins per side until the courgettes are softened with char lines. Remove to a plate and repeat with the remaining courgettes.
  3. In a small bowl, whisk together the orange zest, juice, 2 tbsp olive oil and some pepper.
  4. In a large serving dish toss the salad leaves, cous cous and courgettes, crumble the feta over the top and drizzle with the orange dressing.
