Ingredients

  • 25g Co-op unsalted butter
  • 200g Co-op British leeks, sliced
  • 2 cloves garlic, finely chopped
  • 30g Co-op plain flour
  • 350ml Co-op semi-skimmed milk, plus extra for brushing
  • 1/2 tsp dried thyme
  • 1 tsp English mustard
  • 1/2 x 180g pack Co-op British breaded ham, chopped
  • 120g ready rolled puff pastry
  • 2 tbsp piccalilli

Method

  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Melt the butter in a pan and cook the leeks for around 5 mins, until softened
  3. Add the garlic and cook for 2 mins, then stir in the flour and cook for 1 minute more
  4. Stir in the milk, thyme and mustard and cook for 3-4 mins, until the sauce has thickened
  5. Remove from the heat, stir in the ham and season with black pepper
  6. Tip the mixture into a deep pie dish
  7. Gently roll out the pastry and cut out a lid about 1cm wider than the top of the dish
  8. Place the lid on top of the dish and lightly press down to seal
  9. Brush the pastry lid with milk and bake for 15 mins
  10. Serve with the piccalilli on the side
