Ingredients

  • 1 slice Co-op Honest Value white sliced bread
  • 1/4 x 25g pack flat leaf parsley
  • 440g Co-op outdoor bred pork loin steaks
  • 1 1/2 tbsp Co-op wholegrain mustard
  • 1 tbsp vegetable oil from your storecupboard
  • 2 x 150g bags Co-op bistro salad

Method

  1. Put 1 slice Co-op Honest Value white sliced bread and 1⁄4 x 25g pack flat leaf parsley in a food processor
  2. Blitz into breadcrumbs, tip onto a plate and season
  3. Rub 440g Co-op outdoor bred pork loin steaks with 11⁄2 tbsp Co-op wholegrain mustard, then dip into the breadcrumb mixture to coat
  4. Heat 1 tbsp vegetable oil from your storecupboard in a large frying pan over a medium heat
  5. Cook the pork for 5 mins on each side or until golden and cooked through
  6. Allow to rest for a few mins, then slice and garnish with any crumbs left in the pan
  7. Serve with 2 x 150g bags Co-op bistro salad
