Ingredients

  • 380g Co-op roasting root vegetables
  • 1 Co-op Honest Value brown onion
  • 1 garlic clove
  • 1 tbsp vegetable oil
  • 2 tsp medium curry powder
  • 115g Co-op dried red split lentils
  • 625ml vegetable stock, made with 1 stock cube from your storecupboard

Method

  1. Cook 380g Co-op roasting root vegetables in the oven according to the pack instructions
  2. Meanwhile, finely chop 1 Co-op Honest Value brown onion and 1 garlic clove
  3. Heat 1 tbsp vegetable oil from your storecupboard in a frying pan over a medium heat
  4. Cook the onion and garlic for 5 mins
  5. Add 2 tsp medium curry powder and cook for 2 mins more
  6. Stir in 115g Co-op dried red split lentils, then add 625ml vegetable stock, made with 1 stock cube from your storecupboard
  7. Simmer, covered, for 15 mins
  8. Add the cooked veg to the pan and simmer for 5 mins
  9. Season
  10. Garnish with chopped coriander, if you like
