Ingredients

  • 2 large Co-op sweet potatoes, peeled and diced
  • 2 tbsp vegetable oil
  • 8 Co-op Butcher’s Choice pork sausages
  • 1 Co-op Honest Value brown onion
  • 100ml Co-op South African red (or any red wine you like)
  • 4 tsp Co-op Honest Value gravy granules

Method

  1. Preheat the oven to 200°C/fan 180°C/gas 6
  2. Peel and dice 2 large Co-op sweet potatoes and place on a baking tray Drizzle with 1 tbsp vegetable oil from your storecupboard, mix and season
  3. Add 8 Co-op Butcher’s Choice pork sausages to the tray
  4. Cook for 30 mins, until golden
  5. Meanwhile, slice 1 Co-op Honest Value brown onion
  6. Heat another 1 tbsp vegetable oil in a frying pan and cook the onion over a low heat for 5 mins, until softened
  7. Pour in 100ml Co-op South African red (or any red wine you like), bring to the boil and simmer for 2 mins
  8. Add 4 tsp Co-op Honest Value gravy granules along with 280ml boiling water, and stir to dissolve, then simmer for 2 mins more
  9. Serve the sausages and potatoes with the onion gravy poured over
