  • 100g yellow split peas
  • 1 medium shallot or ½ small onion, finely chopped
  • 3cm ginger, finely chopped
  • 1 bird’s eye chilli, deseeded and finely chopped (optional)
  • Small handful coriander, finely chopped
  • 1 tbsp lemon juice


  1. Put the split peas in a colander and wash under the tap until the water runs clear
  2. Transfer to a bowl and add 200ml cold water
  3. Leave to soak for 5-6 hours, until the split peas have swelled in size
  4. Cook according to the pack instructions, then rinse under cold water and drain
  5. Mix the cooled peas with all the remaining ingredients
  6. Season with black pepper to taste, then serve
