Ingredients
- 100g yellow split peas
- 1 medium shallot or ½ small onion, finely chopped
- 3cm ginger, finely chopped
- 1 bird’s eye chilli, deseeded and finely chopped (optional)
- Small handful coriander, finely chopped
- 1 tbsp lemon juice
Method
- Put the split peas in a colander and wash under the tap until the water runs clear
- Transfer to a bowl and add 200ml cold water
- Leave to soak for 5-6 hours, until the split peas have swelled in size
- Cook according to the pack instructions, then rinse under cold water and drain
- Mix the cooled peas with all the remaining ingredients
- Season with black pepper to taste, then serve
