Ingredients

  • 2 cooked chicken legs, meat stripped
  • 3 tbsp vegetable oil
  • 1 onion, diced
  • 1 clove of garlic, sliced
  • A thumb of ginger, grated
  • 3 spring onions, sliced
  • 1 tsp all-purpose seasoning
  • 1 tsp chilli flakes
  • 1 tin of tomatoes
  • 2 stock cubes
  • 200g peanut butter

Method

  1. Heat the oil in a medium saucepan or casserole dish
  2. Add the onion and fry for 10-15 minutes until golden and soft, then add the garlic, ginger and half the spring onions
  3. Fry for another 4 minutes before adding the all-purpose, chilli flakes, tomatoes and stock cubes
  4. Bring to a simmer and cook for 5 minutes, then add 600ml water, the peanut butter and chicken
  5. Stir well and cook for another ten minutes before serving and sprinkle over the remaining spring onions
