  • 8 tbsp Co-op reduced fat mayonnaise
  • 8 slices Co-op sourdough bloomer
  • 2 tbsp Co-op mild salsa
  • 40g Co-op lightly salted tortilla chips
  • 75g Co-op British baby spinach
  • 120g Co-op red Leicester, grated
  • 2 tbsp drained Co-op sliced green jalapeño peppers
  • Sliced avocado and lime wedges, to serve (optional)


  1. Take half the mayonnaise and spread on one side of each slice of bread
  2. Mix the remaining mayo with the salsa
  3. Take four slices of the bread and spread the other sides with the salsa mayo
  4. Layer up with the tortilla chips, spinach, cheese and jalapeños
  5. Sandwich with the remaining bread, so that the mayo is on the outside
  6. Heat a nonstick frying pan over a medium heat and fry two of the sandwiches for 2-3 mins on each side, until golden
  7. Repeat with the remaining sandwiches, then cut in half and serve with sliced avocado and lime wedges, if you like
