Brushing the pineapple with maple syrup and griddling it gives an irresistibly sticky, caramelised finish

  • 1 Co-op pineapple, peeled and cut into 8 wedges
  • 2 tbsp Co-op maple syrup
  • 4 scoops Co-op GRO salted caramel swirl ice cream
  • Few mint leaves, some shredded, to decorate
  • You will also need 8 small wooden skewers, soaked in water


  1. Push a skewer into each pineapple wedge
  2. Brush each slice with the maple syrup, then cook on the barbecue for 2-3 mins each side, brushing with maple syrup again when you turn them over
  3. Serve with the ice cream, decorated with the mint
