Ingredients

  • 4 medium potatoes, peeled and chopped
  • 2 carrots, chopped
  • ½ cabbage, chopped
  • 1.5 litres vegetable stock, made with 2 stock cubes
  • 1 tomato, chopped
  • 1 small onion, chopped
  • 2 garlic cloves, chopped
  • 1 green chilli, finely chopped
  • Juice of ½ lemon
  • 2 tsp ground coriander
  • ½ tbsp cornflour, mixed with 1 tbsp water
  • 2 tbsp chopped coriander leaves
  • 200g tiger bread, to serve

Method

  1. Put the potatoes, carrots and cabbage into a large pan and pour over the stock
  2. Bring to the boil and cook for 15 mins
  3. Reduce the heat to a simmer, then cook for a further 10 mins
  4. Stir in the tomato, onion, garlic, chilli, lemon juice and ground coriander
  5. Return to a simmer, stir in the cornflour mixture, cover and cook for 20 mins, or until the vegetables are tender
  6. Garnish with the coriander, and serve with bread
