Ingredients
- 4 medium potatoes, peeled and chopped
- 2 carrots, chopped
- ½ cabbage, chopped
- 1.5 litres vegetable stock, made with 2 stock cubes
- 1 tomato, chopped
- 1 small onion, chopped
- 2 garlic cloves, chopped
- 1 green chilli, finely chopped
- Juice of ½ lemon
- 2 tsp ground coriander
- ½ tbsp cornflour, mixed with 1 tbsp water
- 2 tbsp chopped coriander leaves
- 200g tiger bread, to serve
Method
- Put the potatoes, carrots and cabbage into a large pan and pour over the stock
- Bring to the boil and cook for 15 mins
- Reduce the heat to a simmer, then cook for a further 10 mins
- Stir in the tomato, onion, garlic, chilli, lemon juice and ground coriander
- Return to a simmer, stir in the cornflour mixture, cover and cook for 20 mins, or until the vegetables are tender
- Garnish with the coriander, and serve with bread
