Marmalade chicken


This sticky chicken dish is really easy to make – serve with celeriac mash and wilted spinach for something a little different.

  • 4 tbsp Co-op fine cut orange marmalade
  • 2 tsp Co-op Dijon mustard
  • 50ml Co-op fresh orange juice
  • 1 tbsp Co-op olive oil
  • 750g pack Co-op British chicken thighs
  • Mashed potato and green veg, to serve (optional)


  1. Combine the marmalade with the mustard, orange juice and olive oil
  2. Coat the chicken all over, then cover and marinate in the fridge for at least 30 mins
  3. Preheat the oven to 180°C/fan 160°C/Gas 4.
  4. Transfer the chicken and the marinade to a baking dish and cover with foil
  5. Bake for 25 mins, basting occasionally
  6. Remove the foil and cook for another 15-20 mins, until the top is golden and the chicken is cooked through
  7. Serve with mashed potato and your favourite green veg, if you like
