
Marmalade chicken

This sticky chicken dish is really easy to make – serve with celeriac mash and wilted spinach for something a little different.

Ingredients
- 4 tbsp Co-op fine cut orange marmalade
- 2 tsp Co-op Dijon mustard
- 50ml Co-op fresh orange juice
- 1 tbsp Co-op olive oil
- 750g pack Co-op British chicken thighs
- Mashed potato and green veg, to serve (optional)
Method
- Combine the marmalade with the mustard, orange juice and olive oil
- Coat the chicken all over, then cover and marinate in the fridge for at least 30 mins
- Preheat the oven to 180°C/fan 160°C/Gas 4.
- Transfer the chicken and the marinade to a baking dish and cover with foil
- Bake for 25 mins, basting occasionally
- Remove the foil and cook for another 15-20 mins, until the top is golden and the chicken is cooked through
- Serve with mashed potato and your favourite green veg, if you like
