  • 2 red onions, roughly chopped
  • 5 cloves garlic, crushed
  • 100g Co-op chorizo ring, sliced
  • 4 potatoes, roughly chopped
  • 8 Co-op British chicken thighs, skin removed
  • 1 tbsp Co-op olive oil
  • Few sprigs thyme (optional)


  1. Preheat the oven to 220°C/fan 200°C/Gas 7
  2. Roughly mix the onion, garlic, chorizo, potatoes and chicken together and spread out evenly on a baking tray
  3. Drizzle over the oil, then scatter over the thyme, if using
  4. Bake for 45 mins, basting halfway through, then serve
