  • 2 cloves garlic, finely chopped
  • 1 lemon, zested
  • 1 tbsp dried oregano
  • 2 tbsp Co-op olive oil
  • 2 x 520g packs Co-op British chicken thighs
  • 1 red pepper, chopped
  • 1 yellow pepper, chopped
  • 1 red onion, cut into wedges
  • 2 courgettes, thickly sliced
  • 400g baby potatoes, larger ones cut in half
  • 150g Co-op mixed olive trio
  • 100g Co-op Feta
  • Handful fresh basil, torn (optional)


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. In a small bowl, mix the garlic, lemon zest, oregano and olive oil and season to make a marinade
  3. Put the chicken, peppers, red onion, courgettes and potatoes on a large baking tray, pour over the marinade and mix well
  4. Bake in the oven for 30 mins, or until the chicken is cooked through and the potatoes are tender
  5. To serve the traybake, scatter over the olives, Feta and basil, if using
