Ingredients
- 2 cloves garlic, finely chopped
- 1 lemon, zested
- 1 tbsp dried oregano
- 2 tbsp Co-op olive oil
- 2 x 520g packs Co-op British chicken thighs
- 1 red pepper, chopped
- 1 yellow pepper, chopped
- 1 red onion, cut into wedges
- 2 courgettes, thickly sliced
- 400g baby potatoes, larger ones cut in half
- 150g Co-op mixed olive trio
- 100g Co-op Feta
- Handful fresh basil, torn (optional)
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- In a small bowl, mix the garlic, lemon zest, oregano and olive oil and season to make a marinade
- Put the chicken, peppers, red onion, courgettes and potatoes on a large baking tray, pour over the marinade and mix well
- Bake in the oven for 30 mins, or until the chicken is cooked through and the potatoes are tender
- To serve the traybake, scatter over the olives, Feta and basil, if using
