Ingredients

  • For the marinade:
  • Juice of 2 limes
  • 1 tbsp vegetable oil
  • 5cm fresh ginger, peeled and finely chopped
  • 1/4 tsp brown sugar
  • 2 tbsp soy sauce
  • 1 red chilli, deseeded and sliced
  • 2 cloves garlic, finely chopped
  • For the chicken:
  • 350g Co-op British chicken thigh fillets, thinly sliced
  • 3 spring onions, cut into 3cm pieces
  • 1 tbsp vegetable oil
  • 2 heads Co-op British pak choi, quartered
  • 2 x 100g packs Co-op British asparagus tips
  • 150g Co-op British spring cabbage, sliced
  • Handful fresh coriander (optional)

Method

  1. Mix together the marinade ingredients, reserve half, add the chicken and marinate for 10 mins
  2. Thread the chicken and onions onto 4 metal skewers (or wooden ones soaked in water for 30 mins)
  3. Grill on high for 15 mins, turning halfway, until golden
  4. Meanwhile, heat the oil in a frying pan
  5. Add the rest of the veg, fry for 3-4 mins then add the reserved marinade and fry for 1 more minute
  6. Serve the skewers with the veg, and the coriander, if using
