Ingredients
- 4 Co-op British chicken thighs, skin removed
- 1 tbsp smoked paprika
- 1 tsp chilli flakes
- 1 leek, trimmed and sliced
- 1 red pepper, deseeded and sliced
- 1/2 small cauliflower, trimmed and divided into florets
- 4 cloves garlic
- 3 tbsp Co-op olive oil
- 100g kale, chopped
Method
- Preheat the oven to 200°C /fan 180°C /Gas 6
- Arrange the chicken portions in an ovenproof dish. Sprinkle with the paprika and chilli flakes
- Add all the veg apart from the kale and dot over the garlic cloves
- Drizzle with the oil and roast for 15 mins
- Add the kale, toss everything together and return to the oven for 10 mins before serving
