Everyone's favourite Swedish meatballs, made into a sharing pie with thinly sliced potatoes and cranberry sauce.

Ingredients

  • 25g Co-op unsalted butter, plus extra for greasing
  • 700g potatoes, thinly sliced
  • 1 tbsp Co-op olive oil
  • 2 onions, thinly sliced
  • 350g pack Co-op British beef meatballs
  • 25g Co-op plain flour
  • ¼ tsp freshly grated nutmeg
  • ½ tsp allspice
  • 400ml vegetable stock, made with ½ stock cube
  • 2 tbsp Co-op single cream
  • 1 tbsp Co-op flat leaf parsley, chopped
  • Green vegetables and cranberry sauce, to serve

Method

  1. Preheat the oven to 180°C/fan 160°C/Gas 4
  2. Lightly grease a shallow ovenproof dish with butter and arrange half the potato slices in the base so they’re overlapping
  3. Heat the oil in a large frying pan and cook the onion over a medium heat for about 5 mins, until softened
  4. Add the meatballs and cook for about 5 mins, stirring from time to time, until lightly browned on the outside
  5. Arrange the onion and meatballs over the potato slices and set aside
  6. Melt the butter in the same frying pan, then stir in the flour and spices, and cook for 1 minute
  7. Whisk in the vegetable stock and cook, stirring continuously, until thickened
  8. Remove from the heat and stir in the cream
  9. Arrange the remaining potato around the edge of the dish, then pour over the sauce
  10. Cover with foil and cook for 20 mins, then remove the foil and cook for 20 mins more
  11. Sprinkle with the chopped parsley and serve with green vegetables, and some cranberry sauce on the side
