
Meatball pie

Everyone's favourite Swedish meatballs, made into a sharing pie with thinly sliced potatoes and cranberry sauce.

Ingredients
- 25g Co-op unsalted butter, plus extra for greasing
- 700g potatoes, thinly sliced
- 1 tbsp Co-op olive oil
- 2 onions, thinly sliced
- 350g pack Co-op British beef meatballs
- 25g Co-op plain flour
- ¼ tsp freshly grated nutmeg
- ½ tsp allspice
- 400ml vegetable stock, made with ½ stock cube
- 2 tbsp Co-op single cream
- 1 tbsp Co-op flat leaf parsley, chopped
- Green vegetables and cranberry sauce, to serve
Method
- Preheat the oven to 180°C/fan 160°C/Gas 4
- Lightly grease a shallow ovenproof dish with butter and arrange half the potato slices in the base so they’re overlapping
- Heat the oil in a large frying pan and cook the onion over a medium heat for about 5 mins, until softened
- Add the meatballs and cook for about 5 mins, stirring from time to time, until lightly browned on the outside
- Arrange the onion and meatballs over the potato slices and set aside
- Melt the butter in the same frying pan, then stir in the flour and spices, and cook for 1 minute
- Whisk in the vegetable stock and cook, stirring continuously, until thickened
- Remove from the heat and stir in the cream
- Arrange the remaining potato around the edge of the dish, then pour over the sauce
- Cover with foil and cook for 20 mins, then remove the foil and cook for 20 mins more
- Sprinkle with the chopped parsley and serve with green vegetables, and some cranberry sauce on the side
