Ingredients
- 2 large baking potatoes
- 1/2 tbsp Co-op olive oil
- 1 tbsp jalapeños, diced
- 30g Co-op Irresistible Somerset vintage Cheddar
Method
- Preheat the oven to 200°C/fan 180°C/Gas 6
- Mash the potato from the fajita potato skins (see recipe, or cook 2 potatoes and remove the insides) with the olive oil and jalopeños
- Grate over the Cheddar, bake until bubbling then grind over some black pepper
