  • 2 large baking potatoes
  • 1/2 tbsp Co-op olive oil
  • 1 tbsp jalapeños, diced
  • 30g Co-op Irresistible Somerset vintage Cheddar


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Mash the potato from the fajita potato skins (see recipe, or cook 2 potatoes and remove the insides) with the olive oil and jalopeños
  3. Grate over the Cheddar, bake until bubbling then grind over some black pepper
