  • 1 reduced salt vegetable stock cube
  • 1 tbsp Co-op reduced salt dark soy sauce
  • 1 tbsp Co-op Honest Value clear honey
  • Pinch chilli flakes (optional)
  • 300g can Co-op Honest Value sliced carrots in water, drained
  • 198g can Co-op naturally sweet sweetcorn in water, drained
  • 225g can sliced water chestnuts, drained and rinsed
  • 300g can Co-op Honest Value garden peas in water, drained
  • 250g pack dried Co-op medium egg noodles
  • Few coriander sprigs, leaves only, to garnish


  1. Crumble the stock cube into a small jug and add the soy sauce, honey and chilli flakes, if using
  2. Add 2 tbsp boiling water and stir until dissolved
  3. Divide among four microwaveable containers or large glass jars
  4. Layer the vegetables into each one and top with a nest of noodles. Cover and chill until needed
  5. To serve, pour 200ml boiling water into each pot. Stir well and microwave for 3-4 mins, stirring at 1-minute intervals, until the noodles are cooked
  6. Leave to stand for a minute, then garnish with a few coriander leaves
