  • 1/2 tbsp Co-op olive oil
  • 1 Co-op British leek, sliced
  • 2 Co-op flat mushrooms, stalks chopped
  • 1 clove garlic, finely chopped
  • 3 sprigs thyme, leaves removed and chopped, or 1 pinch dried
  • 1/2 tsp Dijon mustard
  • 2 tbsp Co-op reduced fat crème fraîche
  • 50g Co-op Irresistible Somerset vintage Cheddar, finely grated
  • 10g Co-op ready salted crisps, crushed
  • 1/2x125g bag Co-op mixed leaf salad


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Heat the oil in a pan and fry the leek and mushroom stalks for 8 mins
  3. Add the garlic and thyme and cook for 2 mins more
  4. Spoon into a bowl and mix with the mustard, crème fraîche and most of the Cheddar
  5. Put the mushrooms on a baking sheet
  6. Fill with the leek mix
  7. Top with the crisps and remaining Cheddar
  8. Bake for 15 mins, until tender, then serve with the salad leaves
