Ingredients

  • 2 tbsp Co-op olive oil
  • 1 onion, finely chopped
  • 5cm piece ginger, finely grated
  • 2 garlic cloves, crushed
  • 1 Patak’s rogan josh paste pot
  • 1 medium butternut squash, peeled, deseeded and cubed
  • 400g can Co-op chopped tomatoes
  • ½ 125g pack Co-op ready to eat baby spinach
  • ½ 25g pack Co-op fresh coriander, leaves only, chopped
  • Patak’s naan bread, to serve
  • Patak’s Lime pickle, to serve

Method

  1. Heat the oil in a pan. Add the onions and sauté until golden and soft
  2. Add the ginger & garlic, sauté for another minute on low heat
  3. Add the paste pot to the onions and cook for another minute. Add 50ml of water. Cook the paste until the water has evaporated
  4. Add the butternut to the curry along with chopped tomatoes and another 50ml of water
  5. Cover with a lid and cook on a medium heat for about 7-8 minutes or until the butternut squash is cooked
  6. Add the spinach to the pan and stir until wilted. Season, then stir in most of the coriander
  7. Serve sprinkled with the remaining coriander, alongside the Naan bread and lime pickle
