Ingredients
- 1 orange or red pepper
- 2 tbsp Co-op olive oil
- 1 red onion
- 100g Co-op cherry tomatoes (about 12)
- 2 garlic cloves
- 80g Co-op penne pasta
- 1 tbsp Co-op red wine vinegar
- 1 tbsp chopped capers
- 1 tbsp grated Co-op parmesan wedge
- 1 tbsp chopped Co-op parsley and extra parmesan
Method
- Put 1 orange or red pepper, sliced, in a large nonstick frying pan with 2 tbsp Co-op olive oil and cover
- Cook gently for 15 mins, shaking the pan occasionally
- Stir in 1 red onion, sliced, 100g Co-op cherry tomatoes (about 12), halved, and 2 garlic cloves, crushed; cover again
- Stir now and then while cooking 80g Co-op penne pasta according to the pack instructions
- Drain, reserving a mugful of the water
- Stir 1 tbsp Co-op red wine vinegar and 1 tbsp chopped capers into the pepper pan, increase the heat and cook for 1 min, lid off
- Stir in 1 tbsp grated Co-op parmesan wedge and a little cooking water
- Toss the pasta and sauce together
- Sprinkle with 1 tbsp chopped Co-op parsley and extra parmesan to serve
