  • 1.5kg Co-op Maris Piper potatoes, peeled and cut into large chunks
  • 3 tbsp vegetable oil or duck fat
  • 1 heaped tbsp plain flour
  • ½ tsp garlic granules
  • 25g parmesan, finely grated


  1. Put the potatoes into a large pan of cold water, bring to a boil and cook for 10 mins, until soft on the outside when pierced with a sharp knife
  2. Drain using a heatproof colander, then set on top of the hot empty pan, cover with a tea towel and allow to steam dry for 10-15 mins
  3. While the potatoes are steaming, preheat the oven to 200°C/fan 180°C/gas 6
  4. Shake the colander to rough up the edges of the potatoes
  5. Mix the flour, garlic granules and parmesan, and season with black pepper
  6. Toss the potatoes in the mixture
  7. Put the vegetable oil or duck fat in a large, shallow baking tray
  8. Put the oiled tray in the oven for 5 mins to heat up
  9. Carefully add the potatoes to the trays and turn in the oil to coat
  10. Roast for 25 mins, turn, then roast for a further 25-30 mins, until crisp and golden
