  • 200ml pink gin
  • 2 large handfuls fresh berries such as Co-op strawberries and Co-op raspberries
  • 1 lemon
  • 2-3 sprigs mint
  • 750ml bottle Co-op Irresistible sparkling apple, raspberry & rose presse
  • Ice


  1. Pour gin into a pitcher or serving jug. Slice larger berries, add to the gin and give a good stir.
  2. Slice half a lemon into slices and add to the jug, then squeeze in the juice of the remaining half. Place the mint leaves in your hands and give them a few slaps to release the flavour before adding to the jug. Stir and leave to infuse for as long as you like (can be made hours in advance).
  3. To serve, add a few handfuls of ice and pour over the elderflower drink.
