Liven up your snacking with this easy roasted pepper dip

Ingredients
- 30g walnuts
- 1 clove garlic, peeled
- 280g jar Co-op chargrilled peppers in oil, drained
- Small handful fresh mint leaves, or 1 tbsp dried
- 1 tbsp Co-op olive oil
- Freshly ground black pepper
- 2 Co-op white pitta breads
- 1 carrot, peeled and cut into sticks
- 6 radishes, trimmed and halved
Method
- Add the walnuts to a dry frying pan and cook over a low heat for a few mins, until toasted
- Blend the walnuts, garlic, peppers, mint and olive oil until fairly smooth
- Season with black pepper
- Split the pittas in half then slice each half into 6 pieces
- Grill on a high heat until crispy
- Arrange on a plate with the carrot and radishes and serve with the dip
