  • 2 tbsp Co-op olive oil
  • 3 potatoes, peeled and cubed
  • 2 Co-op British pork chops
  • 2 tsp mustard
  • 1 clove garlic, finely chopped
  • 200g Co-op British broccoli
  • Handful flat leaf parsley, chopped


  1. Preheat the oven to 190℃/fan 170℃/Gas 5
  2. Heat 1 tbsp of the oil in a roasting tray for 3 mins, add the potatoes and shake to coat
  3. Roast for 40 mins, turning occasionally
  4. Meanwhile, brown the pork chops in a frying pan for 3 mins on each side
  5. In a bowl, stir together the mustard, garlic and remaining olive oil, then coat the chops
  6. Halfway through the cooking time, add the chops to the roasting tray alongside the potatoes, season both and cook until golden
  7. Steam the broccoli for a few mins until just tender
  8. Sserve with the potatoes and pork, scattering some parsley over the top
