Ingredients
- 2 tbsp Co-op olive oil
- 3 potatoes, peeled and cubed
- 2 Co-op British pork chops
- 2 tsp mustard
- 1 clove garlic, finely chopped
- 200g Co-op British broccoli
- Handful flat leaf parsley, chopped
Method
- Preheat the oven to 190℃/fan 170℃/Gas 5
- Heat 1 tbsp of the oil in a roasting tray for 3 mins, add the potatoes and shake to coat
- Roast for 40 mins, turning occasionally
- Meanwhile, brown the pork chops in a frying pan for 3 mins on each side
- In a bowl, stir together the mustard, garlic and remaining olive oil, then coat the chops
- Halfway through the cooking time, add the chops to the roasting tray alongside the potatoes, season both and cook until golden
- Steam the broccoli for a few mins until just tender
- Sserve with the potatoes and pork, scattering some parsley over the top
