Ingredients

  • 3 tbsps veg oil
  • 1 onion, diced
  • 1 red pepper, deseeded and chopped
  • 1 green pepper, deseeded and chopped
  • 3 potatoes, peeled and roughly chopped
  • 2 cloves of garlic, crushed
  • 1 heaped tbsp curry powder
  • 1 tsp chilli powder
  • 2 tins of chopped tomatoes
  • Salt and pepper
  • ½ Red onion to garnish

Method

  1. Heat the oil in a large saucepan on medium heat
  2. Add the onions and fry for 10-15 minutes until golden brown
  3. Add the garlic, spices and peppers and fry for a further 5 minutes before adding the potatoes and mixing well
  4. Cover with the two tins of tomatoes, plus one tin of water. Season well, cover with a lid and leave to simmer for 30-40 minutes, or until the potatoes are tender and soft
  5. Serve with rice topped with red onion
