  • 1 apple cored, and thickly sliced
  • 1 pear cored, and thickly sliced
  • 3 tbsp Pecans
  • 2 Co-op medium free range eggs
  • 4 tbsp Co-op British fresh semi skimmed milk
  • ½ tsp Co-op Cinnamon
  • A grating of fresh nutmeg
  • ¾ tsp Co-op ground ginger
  • ½ tsp vanilla extract
  • 3 tbsp Co-op pure Canadian Maple syrup
  • 2 thick slices Co-op bakery white farmhouse loaf cut in half diagonally
  • 2 tbsp sunflower spread
  • 4 tbsp Greek style yogurt, to serve


  1. Heat a large non-stick frying pan over a medium heat, add 1 tbsp spread and melt. Add the apple and pear and cook for 5 minutes, turning occasionally until golden. Stir in the pecans, then transfer all to a plate. Wipe the pan clean with kitchen roll.
  2. Meanwhile, in a large bowl, whisk together the eggs, milk, spices, vanilla and 1tbsp maple syrup. Dunk each piece of bread into the bowl, making sure they soak up most of the liquid.
  3. Return the pan to a low-medium heat. Add 1tbsp spread and wait until melted. Add each piece of bread and cook gently for 3 minutes per side until deep golden.
  4. Serve the bread topped with the cooked fruit and pecans with a dollop of yogurt or ice cream and the remaining maple syrup drizzled over.
