Ingredients

  • 3 Co-op Butcher’s Choice Cumberland sausages
  • 1 tbsp Co-op olive oil
  • 1 onion, chopped
  • 1 red pepper, deseeded and chopped
  • 1 clove garlic, crushed
  • 1/2 tsp smoked paprika
  • 100g Co-op piccolo tomatoes, halved
  • 150g risotto rice
  • 400ml chicken stock, made with 1/2 stock cube
  • 100g Co-op frozen peas
  • 1 tbsp flat leaf parsley, chopped

Method

  1. Cut each sausage into 4 pieces and fry over a medium heat, turning occasionally, for 5 mins
  2. Remove and set aside
  3. Add the oil, onion and pepper, fry for 4 mins, then stir in the garlic and paprika and cook for 1 minute more
  4. Add the tomatoes, then stir in the rice and stock
  5. Simmer for 10 mins, stirring occasionally
  6. Return the sausage to the pan, add the peas and simmer, without stirring, for 10 mins
  7. If the rice dries out, add a splash of water
  8. Serve scattered with the parsley
