Ingredients
- 3 Co-op Butcher’s Choice Cumberland sausages
- 1 tbsp Co-op olive oil
- 1 onion, chopped
- 1 red pepper, deseeded and chopped
- 1 clove garlic, crushed
- 1/2 tsp smoked paprika
- 100g Co-op piccolo tomatoes, halved
- 150g risotto rice
- 400ml chicken stock, made with 1/2 stock cube
- 100g Co-op frozen peas
- 1 tbsp flat leaf parsley, chopped
Method
- Cut each sausage into 4 pieces and fry over a medium heat, turning occasionally, for 5 mins
- Remove and set aside
- Add the oil, onion and pepper, fry for 4 mins, then stir in the garlic and paprika and cook for 1 minute more
- Add the tomatoes, then stir in the rice and stock
- Simmer for 10 mins, stirring occasionally
- Return the sausage to the pan, add the peas and simmer, without stirring, for 10 mins
- If the rice dries out, add a splash of water
- Serve scattered with the parsley
