Ingredients
- 2 onions, peeled and chopped
- 3 cloves garlic, peeled and crushed
- 1 tbsp olive oil
- 1 tsp ground turmeric
- 250g Co-op easy cook basmati rice
- 500ml hot chicken stock (made from 1/2 stock cube)
- 400g tin chopped tomatoes
- 150g Co-op chorizo ring, sliced about as thick as a £1 coin
- 2 whole roasted peppers from a jar, chopped (optional)
- Handful of fresh parsley, chopped (optional)
Method
- In a large frying pan, gently soften the onions, garlic and chorizo in the olive oil
- Stir in the turmeric and rice, and cook for 1 minute
- Pour in the chicken stock and tomatoes, cover and simmer for 8 minutes
- Stir in the peppers, if using, replace the lid and cook for 5 more minutes
- Take the lid off and give it all a good stir - the rice should be tender
