  • 2 onions, peeled and chopped
  • 3 cloves garlic, peeled and crushed
  • 1 tbsp olive oil
  • 1 tsp ground turmeric
  • 250g Co-op easy cook basmati rice
  • 500ml hot chicken stock (made from 1/2 stock cube)
  • 400g tin chopped tomatoes
  • 150g Co-op chorizo ring, sliced about as thick as a £1 coin
  • 2 whole roasted peppers from a jar, chopped (optional)
  • Handful of fresh parsley, chopped (optional)


  1. In a large frying pan, gently soften the onions, garlic and chorizo in the olive oil
  2. Stir in the turmeric and rice, and cook for 1 minute
  3. Pour in the chicken stock and tomatoes, cover and simmer for 8 minutes
  4. Stir in the peppers, if using, replace the lid and cook for 5 more minutes
  5. Take the lid off and give it all a good stir - the rice should be tender
