Ingredients
- 1 x 250g pack Co-op long grain microwave rice
- 1 tbsp olive oil
- 1 small red onion, finely chopped
- 1 red pepper, deseeded and thinly sliced
- 40g Co-op chorizo ring, cut into 0.5cm disks
- 1 clove garlic, crushed
- 1 tbsp Co-op tomato puree
- 100ml chicken stock
- 50g Co-op frozen peas
- 1 Co-op ready to eat chicken breast fillet, skinned and chopped into chunks
- 8 Co-op ready to eat king prawns
- Serve with chopped parsley, lemon wedges and Co-op crusty bread (optional)
Method
- Heat the microwave rice according to the packet instructions
- Meanwhile heat the olive oil in a non-stick frying pan over a medium heat, add the onion and pepper and fry gently for 5-6 minutes, until just starting to soften
- Add the chorizo and garlic to the pan and fry for a further couple of minutes, until the chorizo is just starting to crisp
- Add the heated rice to the pan, along with the tomato puree. Stir fry for 1 minute, breaking up any clumps of rice before adding the stock, peas. chicken chunks and prawns
- Cover, then reduce the heat and simmer for 4-5 minutes until heated through
- Sprinkle with parsley and serve immediately with lemon wedges and crusty bread if you like
