Ingredients

  • 350g Co-op fusilli pasta
  • 280g jar Co-op chargrilled peppers, drained and roughly chopped (reserving 1 tbsp plus 1 tsp oil)
  • 1 tbsp chilli paste
  • 400g can Co-op chopped tomatoes
  • 280g jar Co-op artichokes, drained
  • 5 Co-op sun-dried tomatoes, sliced
  • FOR THE SMOKED PAPRIKA TOPPING:
  • 2 tbsp Co-op mixed seeds
  • 1 tsp pepper oil (see above)
  • 1 tsp smoked paprika
  • ¼ tsp ground cumin

Method

  1. Cook the pasta according to the pack instructions, then drain well
  2. Meanwhile, heat the 1 tbsp pepper oil in a pan and stir in the chilli paste
  3. Cook for 1 minute, then add the canned tomatoes, artichokes and sun-dried tomatoes
  4. Simmer for 6-8 mins until thickened slightly
  5. Dry-fry the mixed seeds for 1 minute on a low-to-medium heat
  6. Stir in the oil, paprika and cumin, then cook for 1 minute, until just golden and toasted
  7. Toss the pasta with the tomatoes and vegetables, then serve with a scattering of the spiced seeds
