Ingredients

  • 1 Co-op British chicken breast
  • 1 tsp smoked paprika
  • 400g Co-op British white potatoes, roughly chopped
  • 3 Co-op salad tomatoes, roughly chopped
  • 100g Co-op trimmed fine beans, roughly chopped

Method

  1. Bring a litre of water to the boil in a large saucepan
  2. Add 2 chicken stock cubes from your storecupboard plus the chicken and paprika
  3. Reduce the heat until just bubbling and poach the chicken for 12-16 mins, until cooked through
  4. Lift the chicken out of the stock and set aside to cool
  5. Pour the cooking stock into a large measuring jug and reserve
  6. Heat 1 tbsp rapeseed oil from your storecupboard in the same saucepan
  7. Fry the potatoes and tomatoes over a high heat for 3-5 mins, until beginning to break down
  8. Season with black pepper, then pour over the reserved poaching stock
  9. Top up with 500ml more water, bring to a simmer and cook for 15-20 mins, until the potatoes are very soft
  10. If you prefer a smoother soup, blend with a handheld stick blender – or you can leave it chunky
  11. Shred the chicken with two forks, then add to the soup along with the green beans
  12. Cook for 4-5 mins, until the beans are tender, then serve
