
Spiced watermelon and halloumi skewers

Ingredients
- 1 tbsp Co-op olive oil
- Juice of ½ lemon
- 1 garlic clove, crushed
- 1 red chilli, deseeded and finely sliced
- 400g watermelon, cubed
- 180g Co-op halloumi, cubed
- Handful mint, roughly chopped (or 1 tsp dried)
Method
- Soak 3 wooden skewers in water for 30 mins to prevent them from burning while cooking
- Whisk together the olive oil, lemon juice, garlic and chilli, then season
- Thread the watermelon and halloumi cubes on the skewers, then brush well with the oil mixture
- Cook on the barbecue or a griddle pan for 6-8 mins, or until charred, turning occasionally
- Serve on a platter, scattered with the mint. Each skewer serves 2
