Spiced watermelon and halloumi skewers


Vegetarian and gluten free, these fun, fruity skewers are so easy to make and will keep everyone happy at the barbecue

  • 1 tbsp Co-op olive oil
  • Juice of ½ lemon
  • 1 garlic clove, crushed
  • 1 red chilli, deseeded and finely sliced
  • 400g watermelon, cubed
  • 180g Co-op halloumi, cubed
  • Handful mint, roughly chopped (or 1 tsp dried)


  1. Soak 3 wooden skewers in water for 30 mins to prevent them from burning while cooking
  2. Whisk together the olive oil, lemon juice, garlic and chilli, then season
  3. Thread the watermelon and halloumi cubes on the skewers, then brush well with the oil mixture
  4. Cook on the barbecue or a griddle pan for 6-8 mins, or until charred, turning occasionally
  5. Serve on a platter, scattered with the mint. Each skewer serves 2
