Ingredients

  • 500g Co-op 5% fat British lean beef steak mince
  • 200g Co-op smoked rindless British streaky bacon, finely chopped
  • 1 tsp dried oregano
  • 1 tbsp smoked paprika
  • 1 1/2tbsp Co-op olive oil
  • 1 large onion, finely chopped
  • 1 tsp chilli flakes
  • 2 red peppers, finely chopped
  • 2 x 400g cans Co-op chopped tomatoes
  • 450g wholemeal penne
  • 175g Co-op grated mozzarella

Method

  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Mix the mince, bacon, oregano and paprika in a bowl and roll into 24 walnut-sized balls
  3. Fry in 1 tbsp of the oil on a high heat for 3-4 mins, until browned, remove and set aside
  4. Reduce the heat and add the rest of the oil, the onion and chilli flakes, and fry for 10 mins, until the onion starts to soften
  5. Add the peppers and cook for another 5 mins
  6. Stir in the tomatoes, meatballs and 200ml water
  7. Simmer for 15-20 mins, until the sauce has thickened and the meatballs are cooked through
  8. While the sauce is simmering,cook the pasta according to the pack instructions
  9. Drain and tip into an ovenproof dish
  10. Pour the meatballs and the sauce over the pasta and stir to coat
  11. Scatter over the mozzarella, then bake in the oven for 15 mins, until the cheese is melted and golden
