Spinach and broccoli pasta bake

  • 100g Co-op wholewheat fusilli
  • 1/2 head broccoli, cut into florets
  • 200g Co-op Italian tomato & garlic pasta sauce
  • 125g pack Co-op baby spinach
  • 250g tub Co-op low fat natural cottage cheese
  • 15g Co-op Parmigiano Reggiano, grated


  1. Preheat the oven to 200°C/fan 180°C/Gas 6
  2. Cook the pasta for 1 minute less than on the pack instructions, adding the broccoli to the pan for the last 3 mins of cooking time
  3. Drain the pasta and broccoli, then return to the pan
  4. Add the pasta sauce, half the spinach and a third of the cottage cheese, then stir over a low heat until the spinach wilts
  5. Pour into a baking dish and dot the rest of the cottage cheese over the top
  6. Scatter with the Parmesan and bake for 20 mins until bubbling and starting to turn golden at the edges
  7. Divide the pasta bake between 2 plates and serve with the rest of the spinach on the side
