Ingredients
- 100g cous cous
- 2 tomatoes, finely diced
- 25g pack parsley, leaves roughly chopped, stalks finely chopped
- 1 red onion, finely chopped
- 1 tbsp olive oil
- Juice of 1/2 lemon
- 25g pack mint, leaves picked
- and finely chopped (optional)
Method
- Cook the cous cous according to the pack instructions
- Leave to cool, then transfer to a large bowl and mix with the remaining ingredients
- Season to taste before serving
