Ingredients

  • 100g cous cous
  • 2 tomatoes, finely diced
  • 25g pack parsley, leaves roughly chopped, stalks finely chopped
  • 1 red onion, finely chopped
  • 1 tbsp olive oil
  • Juice of 1/2 lemon
  • 25g pack mint, leaves picked
  • and finely chopped (optional)

Method

  1. Cook the cous cous according to the pack instructions
  2. Leave to cool, then transfer to a large bowl and mix with the remaining ingredients
  3. Season to taste before serving
