  • 3 tbsp Co-op extra virgin olive oil
  • 2 red onions, roughly chopped
  • 4 garlic cloves, finely chopped
  • 2 tbsp Co-op tomato purée
  • 1 tbsp Co-op Irresistible balsamic vinegar of Modena
  • 1kg tomatoes, chopped (we used 2 types of Co-op Irresistible tomato: vine and piccolo)
  • 1 bay leaf
  • 25g pack basil, leaves picked and chopped


  1. Heat the olive oil in a large saucepan and cook the onion on a low heat for 10 mins, until soft
  2. Add the garlic and cook for 5 mins more
  3. Stir in the tomato purée and vinegar, then the tomatoes and bay leaf. Season
  4. Cover and cook gently until you have a chunky sauce — about 30 mins
  5. To serve, remove the bay leaf and stir in the chopped basil
  6. This will keep for 3 days chilled or 1 month in the freezer
