  • 100g Co-op self-raising white flour
  • 150ml vegan milk alternative
  • 1 tbsp Co-op vegetable oil
  • 150g Co-op houmous
  • 20 slices Co-op pickled sliced beetroot, halved
  • 4 Co-op pickled baby gherkins, sliced lengthways
  • 20 sprigs flat leaf parsley


  1. Whisk together the flour and milk alternative until smooth, to make
  2. a simple batter
  3. Heat a drizzle of oil in a nonstick frying pan over a medium heat
  4. Add teaspoons of batter and fry for 1-2 mins on each side, until golden
  5. Remove from the pan and set aside. Repeat with the remaining oil and batter to make 20 blinis in total
  6. Top each blini with some houmous, 2 half-slices of beetroot, a gherkin slice and a sprig of parsley
  7. Season with black pepper and serve
