  • 2 potatoes
  • 100g Co-op frozen carrot, broccoli and sweetcorn mix
  • 2 tsp curry powder
  • 150g puff pastry


  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Cut the potatoes into small pieces, put in a pan of boiling water and simmer for 15 mins, adding the veg mix for the last 3 mins
  3. Drain, return to the pan, add the curry powder and mix
  4. Roll out the pastry and cut out 2 circles about the size of a saucer
  5. Spoon the veg onto the circles, leaving a border round the edges, then fold over and crimp the pastry
  6. Cook for 25 mins, until golden
