These are delicious any time of year, but especially appropriate on St David's Day (1 March).

Ingredients
- 125g Co-op unsalted butter
- 250g Co-op self raising flour, plus extra for dusting
- 100g Fairtrade caster sugar, plus extra for dusting
- 100g currants
- 1 tsp mixed spice
- 1 Co-op British free range egg, beaten
Method
- Using your fingers, rub the butter into the flour, in a large bowl, until the mixture resembles breadcrumbs
- Stir in the sugar, currants and mixed spice
- Add the beaten egg and mix well to form a dough
- Tip onto a lightly floured surface and pat or roll out into a circle about 5mm thick
- Use 6cm cutters to cut out 20 circles, then griddle on for 2-3 mins each side, over a medium-high heat, until golden
- Dust with extra caster sugar to serve, then eat immediately
