  • 12 Co-op British free range eggs
  • 200ml Co-op semi-skimmed milk
  • 1 tbsp Co-op olive oil
  • 1 pack smoked streaky bacon
  • 1 onion, sliced
  • 1 punnet mushrooms
  • 2 large potatoes, grated
  • 1 pack Co-op cherry tomatoes
  • 100g Co-op British Cheddar, grated
  • 100g Co-op Greek Feta cheese, crumbled


  1. Whisk together the eggs and milk, then season
  2. Fry the bacon in half the oil until the fat starts to render, then add the onion
  3. Fry until soft, then tip into a casserole dish
  4. Fry the mushrooms in the remaining oil, then add to the casserole dish
  5. Squeeze out any excess water from the grated potato, then soften in the pan
  6. Once softened, add to the casserole dish, along with the tomatoes
  7. Preheat the oven to 180°C/fan 160°C/gas 4
  8. Add half the Cheddar and Feta, then mix together
  9. Top with the remaining cheese, then bake for around 30 mins, until golden
