Ingredients
- 12 Co-op British free range eggs
- 200ml Co-op semi-skimmed milk
- 1 tbsp Co-op olive oil
- 1 pack smoked streaky bacon
- 1 onion, sliced
- 1 punnet mushrooms
- 2 large potatoes, grated
- 1 pack Co-op cherry tomatoes
- 100g Co-op British Cheddar, grated
- 100g Co-op Greek Feta cheese, crumbled
Method
- Whisk together the eggs and milk, then season
- Fry the bacon in half the oil until the fat starts to render, then add the onion
- Fry until soft, then tip into a casserole dish
- Fry the mushrooms in the remaining oil, then add to the casserole dish
- Squeeze out any excess water from the grated potato, then soften in the pan
- Once softened, add to the casserole dish, along with the tomatoes
- Preheat the oven to 180°C/fan 160°C/gas 4
- Add half the Cheddar and Feta, then mix together
- Top with the remaining cheese, then bake for around 30 mins, until golden
