Ingredients
- 1 Co-op Butcher’s Choice Cumberland sausage
- 4 Co-op piccolo tomatoes
- 2 rashers Co-op British smoked rindless streaky bacon
- 1 tbsp Co-op unsalted butter
- 60g mushrooms, sliced
- 2 Co-op British eggs
- 2 tbsp Co-op semi-skimmed milk
- 2 Co-op tiger rolls
- 2 tbsp Co-op Irresistible caramelised red onion chutney
Method
- Preheat the oven to 190°C/fan 170°C/Gas 5
- Cook the sausage in a small tin for 20 mins then add the tomatoes and cook for 5 mins more
- Meanwhile, fry the bacon until crisp, then set aside and keep warm
- Wipe out the pan, melt the butter and fry the mushrooms until softened, then set aside
- Lightly beat the eggs with the milk, season, then scramble in the pan
- Cut the rolls in half, pull out the insides and discard
- Fill with the chutney, egg, tomatoes, mushrooms, and bacon and sausage, sliced
