Ingredients

  • 1 Co-op Butcher’s Choice Cumberland sausage
  • 4 Co-op piccolo tomatoes
  • 2 rashers Co-op British smoked rindless streaky bacon
  • 1 tbsp Co-op unsalted butter
  • 60g mushrooms, sliced
  • 2 Co-op British eggs
  • 2 tbsp Co-op semi-skimmed milk
  • 2 Co-op tiger rolls
  • 2 tbsp Co-op Irresistible caramelised red onion chutney

Method

  1. Preheat the oven to 190°C/fan 170°C/Gas 5
  2. Cook the sausage in a small tin for 20 mins then add the tomatoes and cook for 5 mins more
  3. Meanwhile, fry the bacon until crisp, then set aside and keep warm
  4. Wipe out the pan, melt the butter and fry the mushrooms until softened, then set aside
  5. Lightly beat the eggs with the milk, season, then scramble in the pan
  6. Cut the rolls in half, pull out the insides and discard
  7. Fill with the chutney, egg, tomatoes, mushrooms, and bacon and sausage, sliced
